Wenn mir eins momentan fehlt, ist es Zeit und ich wünschte mir fast, dass der Tag mehr Stunden hätte. Ich denke, dass das vielen von uns gerade so geht. Wenn dann aber auch noch großer Hunger hinzukommt, ist es eine denkbar schlechte Kombi. Ein Blick in den Kühlschrank und ins Eisfach offenbart, dass ich auch mal wieder einen Einkauf tätigen sollte. Egal. Wir improvisieren. Heute vorhanden: Garnelen, frischer Spinat, Tomaten und Frischkäse. Parmesan und Pasta sind hier immer vorhanden. Los geht‘s. In 15 Minuten steht das Essen auf dem Tisch. Versprochen!

STEP 1 Olivenöl in der Pfanne erhitzen, Koblauchzehen und Garnelen hinzugeben. Sind diese bereits aufgetaut, benötigen sie ungefähr 3-4 Minuten von jeder Seite. Sie müssen durch und rosig sein.

STEP 2 Salbei zupfen, Tomaten und Spinat waschen und nacheinander in die Pfanne geben. Einige Zeit köcheln lassen. Der Spinat zerfällt. Vielleicht noch eine weitere Runde des köstlichen Grüns in die Pfanne werfen.

STEP 3 Hitze reduzieren, Frischkäse und gegebenenfalls – nach Gefühl – noch einen Schuss Milch hinzufügen (gibt euer Kühlschrank weder Frischkäse noch Milch her, nehmt einfach Sahne). Mit Salz und Pfeffer abschmecken. Wenn ihr es mediterran mögt, fügt noch Kräuter hinzu. Müsst ihr aber nicht.

STEP 4 Pasta kochen und Parmesan reiben.

TIPP: Die Kinder, die weder Tomaten, noch den Spinat mögen, bekommen Garnelen zur Pasta gereicht und die, die auf die Soße verzichten, essen einfach Pesto und Parmesan zu den Spaghetti.
